I am going to share with you my mothers version of Americn Chop Suey. So easy yet so delicious:



American Chop Suey


--1-2 lbs hamburg

--1 box pasta, any type

--2 cans of Campbells tomato soup

--salt/pepper to taste

--garlic salt & garlic pepper - optional



--Boil pasta according to directions. As pasta is boiling, brown hamburg along with spices. When hamburg is browned, drain any excess fat and mix in with cooked drained pasta. Mix in cans of tomato soup (soup does not have to be warmed first).



--Eat & Enjoy!



This has always been one of my favorite meals. I hated when my mother was out of Campbells Soup and she would have to use regular pasta sauce. Doing this creates a whole different taste and is not nearly as good I think.

food!


Food! Who doesn't love it? I have never been met with such conflicting feelings on this subject, how could I love something so much yet it be my enemy of every waking moment? (As I like to refer to it as my "eternal diet") Oh well, when creating this blog, I decided to stick with the former feeling and dedicate this site to my true passion. After all, they do say that a way to a man's heart is through his stomach, right? (And all the rest will follow I guess!)



I remember when I was little, my idea of "the best meal ever" was a trip to McDonalds. Now how I would kill for just a little taste of my mothers home cooked meals. (she has since passed on but I was lucky enough to realize the importance of getting her recipes written down and keeping them in a sacred place.)



I would love to share a couple of them with you, and please let me know what you think. I will be updating this page often with new and exciting recipes so please check back often! And as this site progresses, I also hope to be adding some useful tools, such as coupons, cooking tips, etc...

"Simple As Ever "Chicken-Pot-Pie (this is one of those recipes I struggled with even posting but I have gotten such rave reviews I feel I would be doing my mother an injustice by not sharing):



--1 package of boneless skinless chicken breasts

--1 can Cream of Chicken Soup

--1 can Cream of Celery Soup

--1 package pie crusts (such as Pillsbury - 2 rolls in one package)

--1/3 cup milk

--1 can carrots (drained)

--1 can peas (drained)

--any other veggies you would like to throw in

--salt/pepper to taste



Boil the chicken breasts for approx 1/2 hr on med/high heat - when ready, cut up into small pieces and toss in large bowl. Add remaining ingredients with the exception of the pie crusts and mix together. Using either two pie plates or one larger pan, pour mixture in and cover with the pie crusts. Poke holes in crust and place on baking sheet, Bake at 400 degrees for 30 minutes. Serve with a side of stuffing and cranberry sauce and enjoy!







Clam Chowder:



--6 cans of little clams (3 chopped and 3 minced)

--1 tsp celery salt

--1/2 tsp thyme

--2 med size onions chopped

--3 cups of 1/2 & 1/2 cream

--2 cups of whole milk

--3 cans of whole white potatoes

--1/2 tsp of salt & pepper

--1 cup flour

--1/4 cup oil



In a large pot with the heat on medium, fry the onions with a little oil approx 10 mins. (they should be soft). Add all the clam juice (NOT the clams) & stir it up. Gradually add the flour & stir the whole time. Pour in the potatoes and the clams. Put in thyme, salt, pepper and celery salt. Add 3 cups of 1/2 & 1/2 slowly. Continually stir and the chowder will become thicker. (if it becomes too thick, you can add a little more milk.) Do this for approx 1/2 hr to 45 mins and serve. I use bread bowls and this creates a meal.
